HIGHLY RECOMMENDED
ZUCCHINI PIE RECIPE
(Don’s microwave and standard oven version)

3 tbsp. olive oil
1 spanish onion, diced
4 cloves (or more) garlic, crushed or diced
5 small zucchini, cubed
1 1/2 cup whole wheat bread crumbs
5 large eggs
2 to 3 cups grated tex mex cheese
2 tbsp. grated parmesan cheese
1/4 cup dried or freshly chopped parsley
1 tsp, sea salt
1 tsp. fresh ground pepper
1 tsp. dried or freshly chopped oregano
1 tbsp. cayenne pepper or cajun spice
Other spices welcomed to your taste (experiment will ya)
Several plum tomatoes, sliced (do not substitute tomatoes)
Low fat plain yogurt(on the side)

Mix olive oil, onion and garlic in large mircrowavable dish.
Cover with loose lid or waxed paper and nuke for about 5 minutes
Mix in the zucchini and nuke for another 10 minutes.
Mix in the bread crumbs and set aside.

In a small bowl combine the eggs, cheeses and seasonings.
Combine these ingredients with the zucchini and mix well.
Layer entire top surface with overlapping the sliced plum tomatoes.
Nuke for about 20 minutes with the loose lid or waxed paper covering
(until tomatoes are cooked through).
Remove from micowave and allow to set for about 10 to 15 minutes.
Slice and serve with the yogurt on the side.

A definite crowd pleaser, your guests will want to come back for more.

For the health concious (like me)the same dish can be prepared
in a standard oven away from the damaging effects of microwaving.
Use only organic incredients.
Cooking times will be more than doubled.
